200g chocolate, 70% cacao
1/8 tsp salt, optional
In a heat-proof bowl set over simmering water, combine chocolate, water, and salt, if using.
Stir with a silicone spatula until the chocolate is melted and the mixture is smooth.
Transfer the ganache to a bowl. Let sit at room temperature loosely covered until it is the desired consistency.⠀⠀⠀⠀⠀
*If you want this recipe to be vegan, make sure that you are using a high-quality chocolate that doesn’t have any milk or dairy products added.
*Use a high-quality chocolate anyway because it’s flavor is not masked by anything, that is why I love this water ganache.
*After an hour it’s still glossy and perfect for spreading.
*After a few hours it sets more firmly and looses its sheen, use for truffles then or gently re-melt
*The ratio is 1:2.5, water to chocolate, by weight. use this to make more or less.
